Step 1

Heat the pressure cooker with 1 ½ tablespoon ghee. Add 1 teaspoon cumin seeds and fry until it crackles.

Add 1 bay leaf, 2 cardamom pod, 3 black pepper, 1-inch cinnamon stick, 2 cloves, and 1-star anise.

Add 4 chopped green chillies and 5 cashews. Sauté for a minute.

Now add 1 sliced onion and sauté until translucent.

Add 1 teaspoon ginger garlic paste.

When the ginger-garlic turns aromatic, add a handful of mint leaves.

Add 1 cup green peas and sauté for a minute.

Add soaked basmati rice.

Add 1 ½ cup water. and gently stir the rice. Also add 3-4 tablespoons of chopped coriander leaves.

Add salt to taste and mix very well.

Add 1 tablespoon lemon juice and mix well.

Close the lid and pressure cook the rice for 1 whistle on medium flame.

Let the pressure cooker cool down completely and then open the lid.

Finally, matar pulao or peas pulao is ready to serve.
