Kaju Katli Recipe | Kaju Barfi | Cashew Barfi with detailed photos. Kaju katli is a very famous Indian sweet found in every Indian sweet shop. It is mostly served during special occasions and is one of the most gifted sweets during the festival season.

This Kaju katli or Kaju Barfi recipe is a very simple recipe made with very few ingredients such as cashew powder, sugar, ghee, and cardamom powder.

There are a variety of recipes available for making kaju katli. In this recipe, I have used a one-string consistency sugar syrup method to get soft and mouth-melting kaju katli.

Kaju Katli Recipe | Kaju Barfi


 Ingredients


200 gram cashew (1 ½ cup)

½ cup sugar

¼ cup water

½ teaspoon cardamom powder

2 tablespoon ghee

Preparation


1. Firstly, take 200 gm cashew and add into a mixer jar.

2. Grind the cashew to a fine powder. Make sure to grind them in intervals.

3. Sieve the cashew powder and keep it aside.


How to make Sugar Syrup


1. In a kadhai, add ½ cup sugar.

2. Now add ¼ cup water to it.

3. Stir and dissolve the sugar completely. When the sugar syrup starts boiling, lower the flame.

4. Now take a few drops of sugar syrup on a plate and check for one-string consistency.


How to make Kaju Katli


1. Add cashew powder to the sugar syrup. Stir continuously on low flame to avoid any lumps.

2. Add 1 teaspoon ghee.

3. Also, add ½ teaspoon of cardamom powder and stir well.

4. Cook the mixture on medium flame until it becomes thick and smooth.

5. Grease the butter paper with ghee.

6. Transfer the cashew mixture to it.

7. Press and fold the mixture until a soft and smooth dough is formed.

8. When the dough looks smooth, flatten it and make a square-shaped patty.

9. Place another piece of butter paper on it and roll it evenly.

10. Lastly, cut the rolled cashew dough into a diamond shape.

11. Finally, kaju katli is ready to serve.

Suggestion


1. You can add rose water or saffron as per your choice.

2. Also, you can decorate kaju katli with silver vark

3. Do not overcook the kaju katli mixture, it will make your kaju katli hard.

4. Grind the cashew in intervals. Don’t grind them continuously. Continue grinding will release oil from the cashews and we will not get cashew in powder form.
