Rajgira Puri Recipe | Rajgira Poori | Rajgira ki Poori for Vrat with detailed photos. Crispy and puffy rajgira puri is a perfect vrat recipe that can serve on vrat or upwas days such as Navratri, Ekadashi, Mahashivratri, or in the month of Shraavana.

Rajgira poori or vrat ki puri is made with rajgira flour, boiled potatoes, and chilli. This is a very easy recipe and can be prepared instantly with very few ingredients.

Amaranth flour (Rajgira flour) is mostly consumed during the vrat or upwas in India. It is gluten-free and is widely used to make various vrat recipes.

This Rajgira Poori/ Rajgira Puri tastes very delicious when serve with Jeera Aloo.

Rajgira Puri Recipe


 Ingredients


½ cup boiled, grated potato

½ cup rajgira/amaranth flour

1 teaspoon crushed green chilli

½ teaspoon cumin powder

1 teaspoon oil or ghee

3-4 teaspoon chopped coriander

Rock salt/sendha namak as per taste

Oil or ghee for frying

How to make puri dough


1. In a mixing bowl, take ½ cup boiled, grated potato.

2. Add 1 teaspoon crushed green chilli, ½ teaspoon cumin powder, and rock salt to taste.

3. Also, add 3-4 teaspoons of chopped coriander.

4. Mix everything very well.

5. Now add ½ cup rajgira flour.

6. Make a soft dough. You can add more rajgira flour if the mixture looks soggy.

7. Further, add 1 teaspoon oil or ghee and knead.


How to make Rajgira Puri


1. Pinch a small dough ball and dust it with rajgira flour.

2. Roll it gently and make a slightly thick puri.

3. Heat the oil or ghee in a kadhai.

4. Drop the puri in hot oil.

5. Fry the puri on medium-high flame until golden from one side and flip it.

6. Remove the puri from the kadhai.

7. Hot and tasty rajgira puri is ready to serve.

Suggestion


1. Do not add water while making the dough. It will make the dough soggy.

2. Fry the puri on medium-high flame.
