Rumali Roti Recipe | Rumali Roti| How to make rumali roti at home with detailed photos. Rumali roti is a thin Indian flatbread, mainly prepared by using Maida (all-purpose flour), wheat flour, and milk.
As this roti is very thin like a handkerchief and it’s folded like a handkerchief hence it is called Rumali roti. Rumali roti is also called Lamboo roti in the Indian state of Punjab. This soft rumali roti is served mainly with north Indian gravies or with dals.
In the restaurant rumali roti is prepared by using the only maida but traditionally it is made from a combination of all-purpose flour (maida) and wheat flour. Rumali roti is made by flipping and stretching it in the air in all restaurants and dhabbas, but it takes a lot of practice and skill. Ingredients
1 ½ cup Maida (all-purpose flour)
½ cup wheat flour
1 cup milk
2 teaspoon oil or ghee
½ teaspoon salt
Water as required
How to make dough
1. Firstly, in a mixing bowl take 1 ½ cups all-purpose flour, ½ cup wheat flour, and ½ teaspoon salt and mix very well.
2. Add 1 cup milk and mix it with flour.
3. Start kneading the dough by adding water as required.
4. Make soft but little sticky dough. Now add 1 teaspoon oil or ghee and knead again.
5. Now stretch and break the dough by applying some oil on your palm. Repeat this process for 4 to 5 times. It helps to spread the roti while rolling.
6. Now rest the dough for 2 to 3 hours.
7. After 2 hours, again kneed the dough for atleast 2-3 minutes.
How to make Rumali Roti
1. Pinch a small ball sized dough and dust with some all-purpose flour.
2. After that, roll the dough ball and make a thin roti. Dust more all-purpose flour on roti if needed to avoid sticking. Also, make its edges very thin.
3. Now inverted the Kadai and keep on medium-high flame. After few minutes, sprinkle some saltwater on Kadai. Saltwater will prevent the roti from sticking.
4. Now toss the roti from one hand to the other hand till the roti spreads.
5. Roti should look translucent.
6. Place the roti on the hot Kadai and Cook until bubbles appear on the roti.
7. Flip the roti.
8. Now with using cotton cloth press all sides of the roti.
9. Now fold the roti on the Kadai.
10. Finally, Rumali roti is ready to serve now. You can apply some ghee or butter on it.
Notes
1. You can use only all-purpose flour for this rumali roti.
2. Knead the dough very well.
3. Don’t overuse maida for dusting it can harden the rumali roti.
4. You can rest the dough between 1 to 2 hours.
