Instant uttapam is made with rava/suji (semolina), white urad dal and curd. And for topping, onion tomato, and chillies are used.
Uttapam is a very popular south Indian recipe. The traditional Uttapam is made by soaking and grinding the rice and urad dal. And then fermenting the batter for 8-12 hours. This is a very lengthy process. But in this recipe, I have made an easy and instant uttapam with Rava and urad dal. This is an instant recipe, which you can serve as a breakfast or even for a dinner.
For making this recipe, you don’t need to add baking soda, and also there is no need to ferment it. Hence It is a hassle-free recipe and everyone can make this easily at home.

Ingredients
For Uttapam Batter
1 cup rava/suji/semolina (fine)
¼ cup urad dal (split skinned black gram)
½ cup curd
Salt to taste
Water as required
For Topping
1 finely chopped onion
1 finely chopped tomato
2-3 finely chopped green chillies
4 teaspoon coriander leaves
Oil as required
How to make Batter for Instant Uttapam
1. Wash and soak ¼ cup white urad dal in hot water for 15 minutes.
2. After 15 minutes, drain the water from the dal and add the dal to the grinder jar along with ½ cup of water.
3. Make a smooth paste.
4. Now in a mixing bowl, take 1 cup Rava, ½ cup Dahi (curd), and urad dal paste.
5. Add 1 ½ cup water and start whisking it. Add more water if required.
6. Make a smooth, lumps-free batter. Also, add 1 teaspoon salt and mix well.
7. The batter should not be too thick or too runny. Keep the batter aside for 5 minutes.
How to make Instant Rava Dal Uttapam
1. Heat the tawa (griddle) and add 1 teaspoon oil. Spread oil evenly on tawa.
2. Turn the flame on low and pour ladle full batter on the griddle.
3. Spread the batter evenly in a circular shape. Make a thick uttapam.
4. Now sprinkle 1 tablespoon chopped onion, 1 tablespoon chopped tomatoes, and some chopped green chillies on uttapam.
5. Also, sprinkle 1 teaspoon chopped coriander leaves and add ½ teaspoon oil around the uttapam.
6. Cover and cook for 2-3 minutes on low flame.
7. Further, press the topping gently with spoon. It helps the topping to stick on uttapam.
8. Add ½ teaspoon oil on uttapam.
9. Gently flip the uttapam and cook for 1 minute.
10. Lastly, remove the uttapam from the griddle.
11. Instant Rava dal uttapam is ready to serve.
Suggestion
1. Use hot water to soaking the urad dal. It will help to reduce the soaking period.
2. You can use your choice of vegetables for topping.
3. If you are using sour curd, only use ¼ cup instead of ½ cup.
