Here I am sharing a traditional aloo samosa recipe or you can say Punjabi samosa recipe which makes very crispy and tasty samosa. Spices takes a very important role in making samosa more delicious.

Ingredients


For Dough

2 ½ cup Maida (all-purpose flour), ½ teaspoon carom seeds (ajwain), ¼ cup oil, Salt to taste, ¾  cup of water or as required

For Samosa Stuffing

3 large-sized potatoes, ½ cup green peas, 2 chopped green chilies, ½ teaspoon finely chopped ginger, 1 teaspoon fennel seeds (saunf), ½ teaspoon cumin seeds (jeera), ¼ teaspoon cumin powder, 1 teaspoon coriander powder, ½ teaspoon amchur (dry mango powder), ¼ teaspoon turmeric (haldi), ½ teaspoon red chili powder, ¼ teaspoon garam masala powder, ¼ teaspoon crushed black pepper, ½ teaspoon kasuri methi (optional), 2-3 tablespoon oil, 2 tablespoon coriander leaves, Salt to taste

Other Ingredients

Oil for deep frying as required

Preparation


1. Boil 3 large-sized potatoes in a pressure cooker for 5-6 whistles.

2. Peel and lightly mash the potatoes and keep aside.

3. Also, boil green peas for 5-7 minutes on medium flame.


Making the Dough for Samosa Recipe


1. Take 2 ½ cup maida in the mixing bowl and add ½ teaspoon carom seeds (ajwain) and salt to taste. Mix all the ingredients very well.

2. Add ¼ cup oil and mix it very well.

3. The flour looks crumbly and holds the shape.

4. Further, add ¾ cup water and start kneading the dough. Add a little more water if needed.

5. Knead continually to make a tight dough. It should not be soft and sticky.

6. Grease the dough with 1 teaspoon oil, cover it with a damp cloth and keep aside for 15-20 minutes.

How to make Samosa Stuffing


1. Heat the pan with 2-3 tablespoon oil and add ½ teaspoon cumin seeds,1 teaspoon fennel seeds, 2 chopped green chilies, and ½ teaspoon chopped ginger. Saute for a minute.

2. Add ¼ teaspoon turmeric, ½ teaspoon red chili powder, ¼ teaspoon garam masala powder, ¼ teaspoon cumin powder, 1 teaspoon coriander powder, and ½ teaspoon amchur and fry all spices on low flame. Make sure it does not burn.

3. Further, add ½ cup boiled green peas and saute well.

4. Now add mashed potatoes, ½ teaspoon Kasuri methi, and salt. Mix the potatoes very well in the masala.

5. Also, add ¼ teaspoon crushed black pepper powder.

6. Mash the potatoes with the back sides of the spoon.

7. Lastly, add 2-3 tablespoon coriander leaves.

How to make Samosa


1. After 15-20 minutes, knead the dough again for a minute.

2. Pinch a ball sized dough and start rolling. You can grease the dough ball with little oil.

3. Roll the dough ball in an oval shape. It should be slightly thick.

4. Cut it in the center and make 2 equal parts.

5. Now take 1 part and apply water on its straight edge.

6. Join the water coated edges on each other and make a cone.

7. Make sure you press the joined part well so it will not open while frying.

8. Fill the 2 tablespoon aloo stuffing in a cone. Don’t overfill it.

9. Gently press the stuffing in a cone.

10. Apply little water on its open side edges.

11. Further, make a pleat on the opposite side (where you joint edges on each other to make a cone). This helps the samosa to stand.

How to fry the Samosa


1. Heat the oil in a kadhai on low flame and add the samosa. Deep fry the samosa on low flame.

3. When the samosa looks golden and crisp, remove it from kadhai. It takes 10-15 minutes to fry the samosa.
